Your Mom.


Mother: noun. A kind and gentle soul who is expected to put up with a lot of shit from a lot of different people, at a lot of different times, in a lot of different ways. A legitimate angel who goes above and beyond, usually forsaking all of her own needs and desires to make you happy and give you what you want. In order words, a certified saint people!


You see, without moms there would be no one to kiss it better, no one to cut the crusts off of your sandwiches, no one to gang up against your dad with, no one to say “I told you so” and of course, no one to irritate the living daylights out of when dinner isn’t ready yet and you are about to digest a kidney.


It’s bizarre that mothers only get one day in which they receive recognition for all of their time, love and efforts. My dad always used to joke, roll his eyes and say, “every day is Mother’s Day!” and although that really isn’t the truth, it pretty much ought to be.


This caramel cheesecake is the perfect way to say “Happy Mother’s Day” to the old bag who raised you. Ha. It’s also an ideal way to tell her you love her and the best tribute you could give. (Side note: Cheesecakes are the new greeting cards now anyhow…) After all,  without moms, there’d be no “yo mama” jokes. (And that would be an absolute travesty!)


So this one’s for all the moms out there. Whether you’re an actual mother to children, or just look after a rather big one (husband or boyfriend), thank you for the role you have played and will continue to play. This post is for the amazing women out there who are more than just “moms” they’re our best friends, problem solvers and super heroes.


To my own mom, Marian aka Maj, thank you for all the boogers you have wiped, the tears you have dried, the advice you have given (that I probably went out of my way to ignore anyway) and for every time you have made me feel like I could come to you about anything. I love you despite your ridiculous tendency to play Boney M on Christmas… (Cue the Spice Girls, “Maaaaaamaaaaa, I looooove yoooou.”)

This post is also a shout out to the ladies in my life who aren’t my biological mothers, but have treated me like I am one of their own regardless. Les, Ilse and Michelle, you ladies are some of the best moms I know, and I know that your own kids feel blessed to have you. Lastly, it’s for the soon-to-be-moms. Newsflash, being preggers is proper challenging (not that I would know) but it’s not all photo shoots, glowing skin and a place to rest your bowl of cereal (although, that is rather convenient). Stace, this one is for you and for the journey you are about to take, you are going to absolutely nail it!

Happy Mother’s Day, you sweet angels and thank you for being the caramel topping on the cheesecake of life!

The Mother of all Caramel Cheesecakes


For the Base:

1 packet of Digestive Biscuits

100g of Butter (melted)

For the Filling:

3 x 250g tubs of Full Fat Cream Cheese (Philadelphia, but it must be at room temperature)

¾ cup of Caster Sugar

1 teaspoon of Vanilla Extract

1 tin of Caramel Treat (divided in half)

1 and ¼ cup of Whipping Cream (at room temperature)

3 teaspoons of Gelatin Powder

¼ cup of Water at room temperature

  1. Pulse digestives in a food processor until fine and add the melted butter.
  2. Press into a spring form tin lined with baking paper in the bottom.
  3. Put the base in the fridge whilst you make the filling.
  4. Beat sugar and cream cheese until soft (about 2 minutes).
  5. Sprinkle gelatin over the water and allow to sit for 5 minutes.
  6. Add vanilla to the cream cheese mixture.
  7. Add whipped cream and beat until mixture is light and airy (3 minutes).
  8. Cook gelatin and water in the microwave for 30 seconds, remove from microwave and stir.
  9. Beat half the tin of caramel and gelatin mix into the cream cheese mixture for a further 3 minutes.
  10. Pour onto base and smooth the top with a spatula.
  11. Set in fridge for 6 hours or ideally, overnight.
  12. Decorate with the other half of the caramel before serving.
